A café menu is easier to recreate once you stop treating every milk drink as the same espresso with a different name. The difference is in the coffee-to-milk ratio, the texture of the milk, and whether chocolate or ice changes the balance. Here are five genuinely different drinks you can make with an Original espresso or a Vertuo espresso-format capsule. Each recipe serves one. I give a starting measure you can adjust after tasting; your machine's capsule system and the cup size printed on its sleeve always come first.

Before you start: the small setup that changes the result

Use a 40 ml / 1.35 oz espresso as the starting point for a short drink. For a larger latte, one Vertuo double espresso, about 80 ml / 2.7 oz, or two Original espressos will remain noticeable beneath more milk. Do not brew a mug capsule as though it were an espresso shot. Milk volumes below are measured before frothing; foam expands them. A steam-wand machine makes finer, pourable microfoam, while an Aeroccino is excellent for an easy cappuccino-style cap. Set out a small cup, a larger mug, cold milk, and a spoon. If you use chocolate or syrup, put it in the cup, never in the machine's water tank.

1. A soft, everyday latte

Ingredients: one 40 ml espresso; 150 ml / 5 oz milk; optional 5 ml / 1 tsp vanilla syrup. Brew an Original Volluto or Vertuo espresso into a 240–300 ml mug. Warm and lightly froth the milk, stopping before it becomes a stiff mound. Pour most of the warm milk in first and finish with a thin layer of foam. Stir in vanilla before the milk if you use it.

This is the milk-forward cup: the coffee should be present but not dominate. If the espresso disappears, use a more roasty capsule such as Firenze Arpeggio or a double-espresso format, not an arbitrarily overlong extraction. If it tastes too diluted, reduce milk to 120 ml before doubling the coffee.

2. A cappuccino with a generous foam cap

Ingredients: one 40 ml espresso; 100 ml / 3.4 oz cold milk; optional cocoa dusting. Brew Arpeggio into a roughly 180 ml cup. Froth the milk to a thicker texture and add the liquid milk followed by the airy foam. The aim is a smaller, more coffee-forward drink than the latte above. A separate frother works well here; a steam wand also works if you intentionally incorporate more air. Do not fill an Aeroccino above its frothing maximum, which differs from its heating-only line.

A chocolate sprinkle can make this feel like a café treat, but taste the unsweetened drink first. If you want to compare the milk workflows, our cappuccino machine guide distinguishes a separate frother, one-touch carafe and steam wand.

3. A smaller flat white

Ingredients: one 40 ml espresso; 80–100 ml / 2.7–3.4 oz milk. Brew a bold Original Ristretto Italiano or a Vertuo espresso-format capsule into a pre-warmed 150–180 ml cup. Texture the milk with only a little air and swirl the jug until it looks glossy. Pour close to the coffee surface for a smooth, thin layer rather than spooning a dry foam cap on top.

The texture is the point. An Aeroccino can make a delicious small milk coffee, but a Creatista-style wand gives more control over the flowing microfoam. If the drink is mostly foam, it has drifted toward cappuccino. See the flat-white method for pour and texture detail.

4. A real mocha, not a flavored capsule alone

Ingredients: one 40 ml espresso; 10–15 g chocolate or 1 tbsp unsweetened cocoa plus sweetener to taste; 120 ml / 4 oz milk. Melt the chocolate with a spoonful of warm milk in the cup, or mix cocoa into a smooth paste before adding coffee. Brew a roasty espresso such as Arpeggio over it and stir. Add warm, lightly textured milk.

The chocolate should taste integrated, not sit as a powdery layer. Dark chocolate makes a less sweet drink; milk chocolate needs less added sugar. Our mocha recipe includes a cold variation and fixes for grainy cocoa.

5. An iced caramel latte that stays coffee-forward

Ingredients: one 40 ml espresso or 80 ml double espresso; 120 ml / 4 oz cold milk; 100 g ice; 5–10 ml caramel syrup. Add syrup to a 350 ml glass, then milk and ice. Brew coffee into a separate cup, let the violent bubbling settle briefly, and pour it over the ice. Stir before tasting. Use a stronger espresso base if you favor a larger glass; a 230 ml coffee capsule plus milk and melting ice will taste like a different, much longer drink.

Make it less sweet with 5 ml syrup and more coffee-forward with a second espresso. The iced-latte guide explains dilution and capsule choices in more detail.

The capsule and machine decision

For these five, an Original Essenza Mini or Pixie with an Aeroccino covers espresso, foam and a small footprint. A Creatista Plus or Pro suits someone who cares about milk texture and pouring. A Vertuo Pop+ or Vertuo Creatista works if you also want Vertuo's double-espresso and larger-coffee formats; use Vertuo capsules for those machines, never Original. The illustrated recommendations below show the exact systems. Start with one roast you know you like, then alter one variable at a time—milk volume, coffee base or sweetness—so you can tell what improved the cup.

Nespresso's US recipe collection provides manufacturer examples for cappuccino, flat white, iced latte and more. Our ratios are practical starting recipes, not claims that every capsule or frother produces identical foam.
