Affogato is a dessert with unusually little room to hide: one scoop of good ice cream and one hot espresso. I want the first spoonful to meet both temperatures—the cold vanilla and a small pool of freshly brewed coffee—rather than a completely melted sweet latte. It takes minutes, but the order of operations matters more than adding elaborate toppings.

Canadian recipe note

Volumes in this recipe are in millilitres, matching Canadian packaging. Homogenized (3.25%) milk gives the richest microfoam, while 2% makes a lighter everyday latte. If you use a plant drink, the versions labelled "barista" hold foam best.

Ingredients and the basic method

For one serving, use one generous scoop of vanilla ice cream, about 70–90 g, and one 40 ml / 1.35 oz espresso. A small chilled bowl or sturdy glass around 170–220 ml works well. Set the scoop in the chilled vessel first. Brew the espresso separately into a heat-safe cup, bring both to the table and pour the hot coffee over the ice cream immediately before eating. A short shot is deliberate: a full mug of coffee will flood and melt the scoop.

This is an espresso poured over ice cream, not a sweet syrup added to the machine. The word affogato describes the ice cream being “drowned” in coffee. Use a spoon and, if there is melted coffee-ice-cream left, a small sip at the end. If serving several people, scoop all bowls in advance and brew each espresso last so nobody receives a soup while you operate the machine.

The capsule decides the contrast

Firenze Arpeggio has a roasted, cocoa-like direction that stands up to vanilla. Ristretto Italiano makes a more intense-tasting contrast. Volluto is softer and lets the dairy and vanilla lead. A decaf espresso is thoughtful for an evening dessert; check the current Original or Vertuo decaf capsule and brew it at its recommended volume. Use Original capsules only in an Original machine, and Vertuo espresso capsules only in a Vertuo machine. Larger Vertuo mug capsules are for a different dessert portion.

A flavour note is not a literal ingredient: a cocoa-like capsule does not contain chocolate sauce. If the ice cream itself is very sweet, begin with unsweetened espresso. If you choose chocolate ice cream, a gentler coffee can prevent the dessert from becoming all bitterness and sugar.

Serve it well without overcomplicating it

Chill the bowl for ten minutes if convenient; that slows melting without making the ice cream rock-hard. Place the scoop in the bowl only just before brewing. A few toasted hazelnut pieces or a small dark-chocolate shaving can add texture, but first try the two-ingredient version. Do not add alcohol unless the recipient wants it; it changes the dessert completely.

For guests, set up an affogato bar with a small bowl for each person, vanilla and one alternative ice cream, and two espresso profiles. Label the capsules by system if multiple machines are present. Brew on demand rather than keeping shots warm. One machine can handle several servings in sequence, but allow the usual water and capsule maintenance steps according to its manual.

If the result goes wrong

Too much liquid: the coffee volume is too high or the scoop too small; use 40 ml and a fuller scoop next time. Too bitter: move from a very dark capsule to Volluto or choose less-sweet ice cream that lets coffee notes show without a sugar clash. Fully melted before serving: scoop later and pour the coffee at the table. Watery texture: avoid adding ice cubes; the ice cream already supplies the cold component.

Any Essenza Mini, Pixie or Creatista Plus can supply a short Original espresso, while a Vertuo Pop+ can make a Vertuo espresso when used with the correct capsule. The machine slider below is about the coffee base, not an endorsement of buying a machine only for dessert. See Nespresso's official affogato recipe and our espresso-versus-lungo guide if you are choosing the right extraction volume.

A small tasting flight rather than a giant sundae

If you want to compare capsules, divide a scoop into two little bowls and brew one short espresso for each. Try Arpeggio over vanilla in one and Volluto in the other. The first emphasizes roasted contrast; the second makes the ice cream seem more prominent. Do not pour a double espresso over a half-scoop and then blame the capsule for a watery dessert. Portion and extraction must stay in balance.

For dietary needs, a non-dairy vanilla frozen dessert can work, but its fat and sugar level changes the melt. Check the label rather than promising the same texture. For children or caffeine-sensitive guests, do not casually assume decaf is caffeine-free. Offer plain ice cream or a non-coffee topping if needed. This is a dessert first and a coffee comparison second.
