Nespresso Flat White: Espresso Ratio and Pourable Microfoam

The phrase “flat white” does not mean no foam. It means a small, espresso-forward drink with milk textured finely enough to flow into the coffee rather than sitting on top as a big, airy cap. I would rather make one well-balanced 160 ml cup than fill a tall mug and call the result a flat white. You can enjoy a version with a separate frother, but a steam wand makes that glossy, pourable finish easier to control.

Canadian recipe note

Volumes in this recipe are in millilitres, matching Canadian packaging. Homogenized (3.25%) milk gives the richest microfoam, while 2% makes a lighter everyday latte. If you use a plant drink, the versions labelled "barista" hold foam best.

The starting ratio

Use one 40 ml / 1.35 oz Original espresso and 80–100 ml / 2.7–3.4 oz cold milk before steaming. A cup around 150–180 ml / 5–6 oz leaves room for both. If using a Vertuo double espresso of around 80 ml, scale the milk upward or share the coffee between two small cups; it will not be identical to this one-shot version. Nespresso's flat-white recipe describes a roughly one-third espresso, two-thirds lightly frothed milk approach.

Brew into a warmed cup. Texture milk until it is smooth and glossy, not dry. Swirl the jug and pour into the centre of the espresso, bringing the spout closer as the cup fills. Drink it promptly, when espresso and milk still have a unified texture. The recipe is intentionally less milky than a tall latte and less foamy than a cappuccino.

Steam wand versus separate frother

With a Creatista Plus, Creatista Pro or Vertuo Creatista, use the machine's milk setting and a clean jug. Add only a modest amount of air; let the circulating milk break larger bubbles down. Tap and swirl the jug before pouring. The exact program and cleaning procedure depend on the model, so use its manual. A smooth pour matters more than a complicated leaf pattern.

With an Aeroccino, choose the milk setting that produces the least airy foam available on your model. Pour the liquid milk first and hold back stiff foam with a spoon if necessary. The result can be very good, but it may not make the same fine microfoam or latte art as a steam wand. That is an equipment distinction, not a judgment that the coffee tastes bad.

Which capsule holds its place in the milk?

For an Original machine, Ristretto Italiano gives a more roasted, punchy centre; Firenze Arpeggio is cocoa-leaning and dependable with dairy; Volluto creates a softer cup when you keep milk nearer 80 ml. Do not infer caffeine from intensity: a higher intensity label describes flavour, not a guaranteed higher caffeine dose. For a Vertuo Creatista, use Vertuo espresso or double espresso capsules and adjust the serving, never Original capsules just because another Creatista uses them.

If the drink tastes too milk-heavy, use less milk or a more assertive espresso next time. If the top is a thick cap, introduce less air or hold back some foam. If you cannot pour any pattern, first fix texture and cup angle; latte art is not proof of a better-tasting flat white.

Make it part of a routine

A flat white is a quick drink only after the milk workflow feels comfortable. Set out the cup and jug before brewing, clean the wand or frother immediately after use as directed, and keep fresh milk cold until needed. A basic Pixie plus frother suits someone who wants the flavour without practicing pours. A Creatista suits someone who enjoys the small ritual.

A useful comparison with the same capsule

Make two small drinks from the same espresso capsule on different mornings. In the first, use a steam wand and a glossy jug; in the second, use an Aeroccino's least airy setting. Keep milk volume and cup constant. This shows exactly what the equipment changes: not whether one beverage is “real,” but how uniformly milk and espresso meet. If you are buying a machine for a flat-white enthusiast, that distinction is worth more than a vague number of preset recipes.

When making two at once, brew into both warmed cups, texture a batch of milk within the jug's safe capacity and pour promptly. Foam separates while waiting. If the second cup receives only stiff surface froth, swirl the jug between pours. This is a preparation issue, not evidence that the second capsule is weaker.
