Spices can make a familiar espresso feel new, but a generous shake of cinnamon on top rarely creates a balanced drink. I prefer to warm the spice with milk or dissolve it with chocolate, then brew the capsule normally. That keeps ground spice out of the machine and lets the coffee remain the centre of the cup. These four recipes are for one person each; begin with small amounts of spice because cinnamon and cardamom can overwhelm a short shot quickly.

UK recipe note

Volumes in this recipe are in millilitres, the way UK capsule packs and jugs are marked. Semi-skimmed milk gives a lighter latte and froths well; whole milk gives a richer, glossier microfoam. If you use a plant drink, the versions labelled "barista" hold foam best.

1. Brown-sugar cinnamon latte

Ingredients: one 40 ml espresso, 140 ml / 4.7 oz milk, 1 tsp brown sugar and 1/8 tsp ground cinnamon. Warm the milk gently with sugar and cinnamon, whisk until no dry pockets remain, then froth if your equipment allows. Brew the espresso into a 250 ml mug and add the spiced milk. A roasty Firenze Arpeggio can take the sweetness; Volluto produces a softer, cereal-like version.

If the powder collects on the surface, mix it with the sugar and a teaspoon of warm milk before incorporating the rest. Do not put ground cinnamon into the capsule chamber. Nespresso's brown-sugar cinnamon latte offers another official direction.

2. Cardamom espresso with a small milk finish

Ingredients: one 40 ml espresso, 50–60 ml / 2 oz milk, a tiny pinch of ground cardamom and optional 1/2 tsp honey. Warm the milk with cardamom for a minute, strain it if using crushed pods rather than powder, and pour over a freshly brewed espresso. Keep this in a small cup: too much milk would erase the aromatic contrast.

A short Ristretto Italiano works if you like a roasted base. If cardamom becomes perfumey, cut the dose before changing capsules. Honey belongs in the cup and can be omitted. This is a lightly scented coffee, not a syrup-heavy seasonal drink.

3. Spiced dark-chocolate mocha

Ingredients: one 40 ml espresso; 12 g dark chocolate; 120 ml / 4 oz milk; a pinch each of cinnamon and ground ginger. Melt chocolate in a tablespoon of warm milk, stir in spices, brew espresso into the mixture and add the remaining warm milk. Taste before sweetening. A Firenze Arpeggio base keeps coffee visible against cocoa.

Use less ginger than cinnamon at first. If the texture is gritty, dissolve the spices in the chocolate mixture more thoroughly. Our mocha method covers the unspiced version and an iced alternative. Nespresso's Christmas spiced mocha is a different, more elaborate manufacturer example.

4. Orange-chocolate espresso, no artificial orange syrup required

Ingredients: one 40 ml espresso, 8–10 g dark chocolate, 60–80 ml warm milk and a small strip of clean orange zest. Warm the zest briefly in the milk, remove it, melt the chocolate in a spoonful of that milk, then add espresso and the remaining milk. Keep the white pith out; it can add harsh bitterness. The orange should be a scent behind the coffee, not orange juice in a milk drink.

A darker capsule such as Napoli makes a dramatic small dessert cup; use a softer capsule if the chocolate is very dark. Do not add citrus juice to hot milk, which can split. This is different from a tonic-style cold drink.

Choose equipment for the drink, not the season

An Essenza Mini or Pixie makes the short espresso; a small saucepan and whisk can handle the spiced milk. An Aeroccino makes plain foam, but check its manual before putting sugary, chocolate or spice mixtures inside it—mix those ingredients in the cup or saucepan unless the model explicitly allows them. A Creatista Plus steam wand gives texture control; keep particles out of the wand and clean milk components as directed. All Original suggestions below are Original capsules; a Vertuo owner needs the appropriate Vertuo espresso instead. The capsule finder can match another roast once you know the base you enjoy.

A small spice station that does not dirty the machine

Keep measured cinnamon, ginger and cardamom in separate little dishes. Use a dedicated spoon, and add spices to a cup or saucepan after the coffee has been brewed normally. Wipe spills before they reach the machine controls. For a shared morning, brew each espresso on demand and prepare a modest batch of plain warm milk; add the chosen spice in each person's cup. That makes it possible to serve a cinnamon latte to one person and unspiced coffee to another without cleaning a syrup-coated milk system between them.

If using whole cardamom pods, crack and steep them in milk, then strain. Do not let fragments reach a wand or frother. If a drink seems flat, try a tiny pinch of salt in the chocolate mixture or change the coffee roast; doubling the spice usually makes it harsher, not richer.
