A cappuccino should not be a huge mug of milk wearing a little espresso underneath. I begin with a short shot and a small cup, then add warm milk and a foam cap that feels light without turning into a dry, soapy mound. The trick is to choose your milk method before you choose the machine: a separate frother is wonderfully simple, while a steam wand gives more control over how fine the bubbles become.
